Cellar visit
Discovery and tasting
For a seminar, company outing, association trip, or to host your clients, we offer a cellar tour in a wonderful setting. You can choose to take a guided walk through the vineyard, visit the cellar, the underground barrel and amphora storage area, or simply participate in a wine tasting course.
Barrel and amphora cellars
Our barrel and amphora cellar consists of 21 amphorae, 4 Dolias, 20 demi-muids (500L), about fifty barrels (225L) and 2 truncated conical vats.
The bottler
The bottling plant has a capacity of 100,000 bottles. All wine packaging in cases and cartons is done at the Domaine.

For direct sales and tastings, our wine cellar is open every Saturday from 11 am to 13 pm without an appointment. You can taste our entire range of wines free of charge. A pleasant opportunity to learn a little more about the secrets of the wine world.
The press room
No wine is made without grape juice, so the press is essential to winemaking. We are equipped with two Willmes Sigma pneumatic presses, the pinnacle of winemaking technology. These presses are suitable for processing whole grapes as well as crushed and fermented red grapes. The quality of the extracted juice is exceptional.
The 3 winemaking cellars
The first cellar is the workshop where most of the winemaking operations take place. All the tanks can be heated/cooled at will or placed under nitrogen.
The second cellar has the same functions and also serves as a wine storage area for aging red wines during the summer.
The third cellar is mainly used for micro-vinification trials at Domaine des Balisiers and for cleaning, maintenance and rinsing of the barrels.
The large cellar for barrels and amphorae
The large cellar for barrels and amphorae, like the wine cellar, is underground. The temperature, very stable, fluctuates between 14 and 16°C summer and winter.

Tastings are available by appointment:
- Monday to Friday, minimum 5 people
- CHF 25.- /person, with a choice of 3 white wines and 3 red wines

Our presses
Our two Willmes Sigma presses are pneumatic presses, representing the pinnacle of their technology. Thanks to their patented flexible juice channels made of woven fiber, they possess pressing properties unmatched by any other pneumatic press. With their large perforated surfaces, the Flexidrain drains ensure optimal juice extraction. With the central drains, drainage is over 50%. Simultaneously, the lees released by the pumps are filtered, the membrane covers the grapes on all sides, and the juice flow is reduced by an average of 50% compared to traditional presses. The compressed pomace loosens more quickly. No more long rotations are needed… These presses are suitable for processing whole grapes as well as crushed and fermented red grapes. The juice quality is exceptional.
White grapes must be pressed immediately as whole bunches, as they are susceptible to oxidation. Before being placed in vats, red grapes are destemmed (the berries and stems are separated). Fermentation lasts one night for the rosé (Rose de Lune) and up to three weeks for the Cabernet (Comte de Peney).
