Within the ranks of the Domaine, a magical moment is unfolding: veraisonThis is the delicate stage where the berries, still firm and acidic, begin their transformation towards ripeness. The white grapes turn from green to gold, while the reds take on purple and violet hues. The spectacle is as beautiful as it is promising.

This phenomenon marks a key stage in the vine cycleIt is from veraison onwards that the grapes begin to accumulate sugar, lose acidity, and concentrate their aromas. This is also the moment when the winemaker pays extra attention: every detail counts to ensure that the rest of the ripening process takes place under the best possible conditions.

Here in Geneva, practicing organic and Demeter biodynamic viticulture, we approach this period with gentleness. We observe, we taste, we ensure a balance between foliage and grape clusters, and we limit interventions to let nature take its course. Because veraison is a bit like the beginning of a promise: the promise of...a grape ready to become wine.
