This Aligoté has a pale yellow color with greenish highlights and a beautiful brightness.

Nose

From the start, notes of freshly cut hay are revealed; on the second nose come aromas of citrus and wet stone, suggesting a beautiful minerality.

The palate is frank and intense with a beautiful mineral attack. Midway through the tasting, the aromas perceived on the nose become more defined and accurately reflect the typicity of the grape variety in this particularly successful vintage.


The winemaking process, partly carried out in concrete dolia, and the fact that organic matter is left in constant suspension with the wine, gives it a lovely smoothness.

Serve with a carpaccio of black cod flavored with coriander and fresh almonds, finished with a drizzle of olive oil from Domaine de Lauzières.
