Eye
The color is vibrant, a purplish red with a strong, almost dark and brilliant intensity.
Nose
On the nose, the power is there, we find leather, oakmoss and black fruits.
appetizer
The initial taste is fresh, followed by a powerful surge of leather, blackcurrant, blackberry, and mignonette. This power is echoed on the mid-palate with notes of cedar, kirsch, and warm tannins. The finish is long with subtle oak.
Blend: 2/3 Cabernet Sauvignon, 1/3 Cabernet Franc, aged in oak barrels between 18 and 24 months.
Food and wine pairing: Hare stew, 7-hour leg of lamb.
Our estate pioneered the introduction of this grape variety to Switzerland. The first plantings were even considered illegal and uprooted. Our Comte de Peney is aged in oak barrels and amphorae. The Cuvée Comte de Peney is a wine particularly suited to fine dining. It is also appreciated by wine enthusiasts and collectors, and/or for birthdays, as it is our Comte de Peney with the longest aging potential in the Domaine des Balisiers selection.
