Minuit en Bulles, a sparkling white wine, presents itself with pretty fine bubbles and a yellow color with green highlights..

Nose

On the nose, a superb freshness leading to smoky notes, typical of Chenin Blanc. Gradually, rhubarb notes dominate, creating a beautiful olfactory sensation.

The bubbles are fine, delicate, and creamy, perfectly complementing the pure minerality of the Chenin Blanc. Although it's a Brut with zero dosage, its richness and fullness are achieved through extended aging on the lees before disgorgement. Notes of rhubarb and yellow fruits are present, resulting in a wine of great complexity.


The first pressing of this gem was done around midnight, hence its name.

Following the traditional method, the base wine is aged for twenty-four months in demi-muids (600-liter barrels), then, after bottling, it is left for a further thirty-three months on its lees. These sparkling wines pair equally well as an aperitif, with goat cheese, red mullet, or oysters.
